
🌰 Diabetic-Friendly Nut & Seed Tart (Healthy Toffee Bites)
Most Indian tea-time snacks are deep-fried and high in refined carbs, which can spike blood sugar. This nut & seed tart (similar to toffee but without refined sugar) is a crunchy, nutritious, and guilt-free alternative for people with diabetes.
⭐ Ingredients
- Mixed nuts & seeds – 1½ cups
(Almonds, walnuts, cashews, pine nuts, groundnuts, pumpkin seeds, sunflower seeds, flax seeds, watermelon seeds – lightly roasted) - Organic Brown Sugar Candy Powder OR organic jaggry OR
- Alternative sweetener – 3–4 tbsp (erythritol, xylitol, or stevia-based blend)
- Honey – 2 tbsp
- Cinnamon powder – ½ tsp
- Cordamom powder- ½ tsp
- Vanilla essence – 1 tsp
- Pinch of salt (balances sweetness)
🥣 Method
- Roast the nuts & seeds
- Lightly roast nuts and seeds in a dry pan until aromatic. Chop larger nuts roughly.
- Prepare the binding mix
- In a saucepan, add organic brown sugar candy powder OR organic jaggry
- Heat gently until it forms a sticky syrup-like consistency.
- Add 3 spoon Honey
- Combine
- Mix roasted nuts & seeds, white gingelly seeds, cardamom powder, cinnamon powder, vanilla, and a pinch of salt into the syrup.
- Stir well until everything is coated.
- Set into tart form
- Line a tray or tart molds with parchment paper.
- Press the mixture firmly into the tray/molds while warm.
- Cool & Cut
- Let it cool completely at room temperature or in the fridge until firm.
- Cut into bars, squares, or small tart pieces.
