A soft, nutty, and chocolatey cake made with seeds, nuts, and oats β this recipe is diabetic-friendly, high in protein and fiber, and free from refined sugar.
β Ingredients
- Mixed seed & nut powder β 2 cups
(Almonds peeled, pine nuts, groundnuts, flax seeds, sunflower seeds, pumpkin seeds, watermelon seeds β roasted & powdered) - Oats powder β 1 cup
- Eggs β 3
- Unsalted Butter 1/2 cup
- Baking powder β 1 tsp
- Baking soda β Β½ tsp
- Vanilla essence β 1 tsp
- Honey β 2 tbsp (optional, can replace with sugar-free syrup)
- Alternative sugar powder β as per taste (Stevia, Erythritol, Xylitol)
- Milk β Β½ cup (low-fat or almond milk)
- Cocoa powder β 2 tbsp (unsweetened)
- Cashews & black dry grapes β handful for garnish

- Mix dry ingredients β Combine nut & seed powder, oats powder, cocoa powder, baking powder, and baking soda.
- Whisk wet ingredients β Beat eggs until fluffy, then add milk, vanilla, honey, and alternative sugar.
- Combine β Slowly fold wet mixture into the dry mix. Adjust with milk if batter is too thick.
- Bake β Pour into a greased tin, garnish with cashews & raisins. Bake at 170Β°C (340Β°F) for 25β30 mins.
- Cool & Serve β Let cool fully before slicing.
